Ice Cream Pumpkin Pie

Ingredients
1 package (9 ounces) prepared graham cracker pie crust
1 pint vanilla ice cream softened
1 can (16 ounces) pumpkin
1 cup whipped cream
3/4 cup sugar
2 teaspoons pumpkin pie spice
1/2 teaspoon salt
Directions
Fill pie crust with ice cream; freeze until solid.

In medium bowl, combine pumpkin, whipped cream, sugar, pumpkin pie spice and salt.

Spoon mixture over frozen layer of ice cream in crust; freeze until solid.

To serve, remove pie from freezer and place in refrigerator one hour before serving. Slice and serve with additional whipped cream, if desired.

Frozen non-fat yogurt and fat-free whipped topping may be used in place of ice cream and whipped cream.

Squash Casserole

Ingredients
4 cups cooked yellow crook neck squash
1 medium onion
1 tsp salt
1/2 tsp pepper
1 stick butter or margarine
2 cups crushed Cheezit crackers
2 cups shredded cheddar cheese
1 cup milk or heavy cream
Directions
Cook the squash, onion, butter, salt and pepper until onion and squash are tender.

Mix remaining ingredients except for 3/4 cup of the crackers and 3/4 cup of the shredded cheese.

Pour into a 2 quart casserole and top with remaining crackers & cheese.

Bake at 350 for 30 minutes

Fruited Sweet Potatoes

Ingredients
1 can (40 ounces) sweet potatoes drained and mashed
1 can (8 ounces) crushed pineapple in juice drained
1/4 cup each bourbon, brown sugar, golden raisins, shredded coconut
2 teaspoons pumpkin pie spice
1 teaspoon salt
vegetable cooking spray
Directions
Preheat oven to 350.

In large bowl, combine sweet potatoes, pineapple, bourbon, brown sugar, raisins, coconut, walnuts, pumpkin pie spice and salt.

Pour mixture into 2-quart casserole dish that has been sprayed with cooking spray.

Bake at 350 degrees F. for 40 minutes.

Yum, that sounds incredible. I'm leaving this afternoon to hook up with family in Georgia. Once I get there, I can make that tonight, as I'm supposed to be bringing a dessert. But have I made one yet? No.

Would you mind if I "borrow" your recipe, Sirwen?

Note to cooks, do not use the Garlic flavored PAN when making your Granny's Pound Cake!

I usually hate green bean cassarole (because of those fried onions and also the cream of mushroom soup) but my mother in law made one that was delicious! Green beans, almond slivers and cream of celery soup! Yum!!!
