Orange Cake
Orange cake is one of my favorite kinds of cakes. I tried improvising a yellow cake mix and it's very good, quick and easy.
I used a 9 x 13-inch cake pan sprayed with nonstick cooking spray.
1 yellow (white would work) cake mix
1 orange
~1/2 cup of orange juice
2 tablespoons sugar
Put the oj and sugar in a small bowl and mix with a spoon until the sugar is dissolved. (Do this while the cake is baking.) Leave the spoon in the bowl with the juice mixture - you will need it later.
Remove the zest from one orange. Put put the zest in the bowl to your mixer.
Add cake mix ingredients.
Mix and bake according to directions. Put cake (in pan) on a cooling rack.
Let cool about 15 - 20 minutes. Poke holes about 1/2-inch apart in the cake with a two-pronged cooking fork (the kind of fork you use for holding a roast while you're carving it). Spoon the orange juice mixture over the top of the cake until it is gone.
You won't need frosting with this cake. It's very good like it is. You could use a dollop of whipped topping on it if you want. _________________
